NEW YORK CHEESECAKE

 

RECIPE IN SPANISH HERE

INGREDIENTS:

2 cups of finely crushed gram crackers
1/2 cup of melted butter
24 ounces of cream cheese, softened at room temp
1 full cup of sugar
1 1/2 teaspoon of vanilla flavoring
4 large eggs
1 1/2 cups of sour cream

DIRECTIONS:

1. Mix the gram cracker crumbs and butter in a small bowl. Make certain that all crumbs are coated with the liquid butter.  Press this mixture onto the sides of a 10 inch spring form cake pan.

2. Place softened cream cheese and one cup of sugar into a medium sized bowl. Now blend these two ingredients with an electric mixer, just until well mixed.

3. Crack each of the four eggs in a small bowl. Then add them into the cream cheese and sugar mixture, add the sour cream. Slowly blend in the eggs until well mixed. Take care not to over beat this mixture.

4. Add the one tablespoon of vanilla flavoring and lightly blend.

5. Spoon this mixture into the spring form pan, over the top of the crust.

6. Place into the oven and bake at 350 degrees for 30 - 40 minutes.

8. Remove the cake from the oven, and run a knife around the edges of the pan. Set the cake aside to cool.

9. Once it is completely cooled, cover it with Cherry filing, and place it in the refrigerator.

SWEET POTATO PECAN PIE

Hello, almost is Thanks Giving and I will prepare a Sweet Potato Pecan Pie. In my Country the Sweet Potato is called Batata, is white and very sweet, here in Panama is called Camote, is very similar to American’s Sweet Potato, but not is very Sweet.  The pie crust in this recipe I was taking to the Gordon Ramsay cookbook and the filling I took to the closet cooking blog. I never ate this pie, I don’t know how is taste, today I will tray.

INGREDIENTS:

Filling:

1 cups sweet potato cook and mashed
1 egg
1/2 cup brown sugar
1 teaspoon vanilla extract
1 teaspoon cinnamon
1/2 teaspoon ginger

Toping:

2 cups pecan halves
1/4 cup brown sugar
1/4 cup maple syrup or golden syrup)
1 egg
2 tablespoons butter
1 tablespoon bourbon or brandy (optional)

DIRECTIONS:


Place the pie crust into a pie plate

Then mix the sweet potatoes, eggs, sugar, ginger, vanilla and cinnamon in a large bowl.

In another bowl mix the maple syrup, eggs, sugar, butter, vanilla and bourbon or bandry.

Then pour it the filling into the pie crust

Place the pecans on top of the sweet potato filling, and pour it the topping on top of the pecans.

Bake in a preheated 350F oven until the pastry id golden brown and the pecan layer is set, about 45 minutes or less.

  • (1 stick) unsalted butter, melted and cooled
  • 1 cup sugar
  • 3 large eggs
  • 1 cup pumpkin puree
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 3/4 cups all-purpose flour
  • 1/3 cup milk
  • 1 cup cranberry
PREPARATION
  • Preheat oven to 350ºF

  • Whisk together butter, sugar, eggs, pumpkin puree and vanilla in a large mixing bowl.

  • Stir in baking soda, baking powder and salt. Stir in 1/2 of flour, then milk, then remaining flour, stirring until just combined (do not over mix). Fold in cranberry.

  • Scrape batter into pan and smooth top with a rubber spatula.

  • Bake until firm to the touch and a toothpick inserted in center comes out clean, to 60 minutes.

BASIC SHORT PASTRY

Hi again, today I bring you a basic short pastry for any sweet dessert, I love all pie, sweet or salty. This recipe is quick and easy to make and I took the Gordon Ramsay Cookbook

Make about 1 pound
1/2 cup (1 stick) unsalted butter, softened to room temperature
7 tablespoons sugar
1 extra-large egg
1 3/4 cups all-purpose flour


DIRECTIONS
Place the butter and sugar in a food processor and blitz until just combined. Add the egg and blitz again for 30 seconds.

Tip in the flour and process for a few seconds until the dough just come together. Not Over-process. Add a tablespoon of a cold water if the dough seems too dry.

Wrap in plastic wrap and refrigerate for 30 minutes before using.

Roll out the pastry on a floured surface to about 1/8 inch thickness o less, leave a little excess pastry hanging over the sides of the pan.
